This is one of my ‘healthy comfort food’ choices. It’s so easy to make, and pretty cheap too.
Ingredients
3 good sized portions of beans
- 2 tbsp of either olive oil, butter, or coconut oil for frying
- 1 large onion, finely chopped
- 2 gloves of garlic, crushed
- 400g tin of haricot beans (butter beans are a nice alternative)
- 400g tin of tomatoes
- 2-3 tsp paprika
- 2 tsp ground cumin
- 1/2 tsp chilli powder
- 1 tbsp tomato puree
- salt and pepper
- 250g spinach (optional)
Potatoes or sweet potatoes for your chips
Method
- Fry your onions until soft
- Add the spices and fry for about a minute
- Add the drained beans, the tomatoes, and the tomato puree
- Bring to the boil and then let in simmer for about 10 minutes
- Add salt and pepper to taste
- If adding spinach, do this at the end just before serving
- Chop your potatoes up into chips, I like thin chips, but fat chips are nice too
- Put in a bowl, grind salt and pepper over, and then drizzle over a generous amount of olive oil, make sure all the chips are covered
- Put on a baking tray, and put in a hot over for 20 minutes (200C)
- After 20 minutes give the chips a shake and turn them over – this helps gets them crispy all over
- Put back in the oven for 10 minutes and then they should be ready
